
Soy Cooking Tips
Soy Milk
Soy milk contains little saturated fat. While beneficial for cardiovascular health, it can make cooking puddings and pie fillings challenging. Add less liquid and 1/4 cup cornstarch to pudding recipes to allow the pudding to "set up." Constantly whisking is also necessary.
Soy milk will scorch, not unlike dairy milk, if boiled at a high temperature, and form a skin. Stir constantly while boiling to avoid either from occurring.
Soy milk can be frozen, although this is not recommended due to the possibility of taste and consistency alterations. If soy milk must be frozen, freeze for less than 48 hours and defrost SLOWLY in the refrigerator. Cultured soy should not be frozen.
Vanilla soy milk can be substituted for regular dairy milk in baking recipes.
Soy Yogurt, Soy Cheese & Soft Tofu
Soy yogurt can be used in any recipe that calls for dairy yogurt or sour cream.
Soy yogurt provides a healthy breakfast and an easy option to add protein to smoothies. A tablespoon of cultured soy can also be added to salad dressings.
Soy cheese, or silken tofu, offers a convenient substitute for sour cream or cream cheese in dip recipes.
Soy Creamer
Soy creamer can complement coffee, tea or raspberry soda. Similar to dairy creamers — soy creamer adds a creamy texture. It is also a healthy topping to a bowl of fruit or drizzled over shortcake.
However, soy creamer does not contain enough fat to "whip" like dairy whipping cream, heavy cream or half and half.
Soy Flour
Soy flour is an excellent substitute for all-purpose flour in baking recipes. Baked goods using soy flour brown quickly and will need a slightly lower baking temperature than traditional recipes.
Soy flour will also thicken gravies and cream sauces.
Soy Smoothies
Soy smoothies can be mixed with fresh fruit or a fruit sorbet, creating an icy fruit shake.
Tofu
Firm tofu can be cubed and served in soups, stir fried or grilled. Firm tofu is higher in soy protein, fat and calcium than other forms of tofu.
Soft tofu can be used in recipes that call for blended tofu such as scrambled eggs, smoothies and puddings.
