Akasha's Oven-Fried Green Tomatoes
Ingredients
Canola cooking spray or olive oil
2 cups cornflakes, pulverized into crumbs in a food processor
1 cup fine dry bread crumbs
1/3 cup grated Pecorino Romano cheese
1 teaspoon paprika
¼ teaspoon dried thyme
Pinch of freshly ground white pepper
⅛ teaspoon cayenne pepper
½ cup unbleached all-purpose flour
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ cup liquid egg whites, or 4 fresh egg whites
¼ cup Silk® Soymilk Plain
3 green tomatoes, ends removed and cut into ½-inch slices
1 tablespoon melted unsalted butter or olive oil
Instructions
Pre-heat the oven to 400˚F. Line a baking sheet with parchment and spray or oil it.
On a large plate combine the cornflake crumbs, cheese, paprika, thyme, white pepper, and cayenne. On another plate mix the flour, salt, and pepper. In a medium bowl whisk the egg whites and soy milk together.
Coat the tomato slices in the flour mixture, followed by the soy milk mixture, and then coat with the cornflake crumbs.
Place the tomatoes on the prepared baking sheet and drizzle with the butter.
Bake for 10 minutes, then turn and bake an additional 10 minutes. Serve hot.
