Akasha's Green Chile Soy Mac and Cheese

Ingredients

Canola cooking spray or oil

8 ounces white spelt or other elbow macaroni

2 ¾ cups Silk® Soymilk Plain

1 bay leaf

2 tablespoons canola oil or nonhydrogenated soy spread

½ medium onion, minced

3 tablespoons white spelt or unbleached all-purpose flour

2 ½ cups grated cheddar-style or nacho-flavored soy cheese (about 10 ounces)

½ teaspoon paprika

1 ¾ teaspoons kosher salt

¼ teaspoon freshly ground black pepper

2 poblano chiles, roasted, peeled, seeded, and cut into ½-inch dice, about ¾ to 1 cup (optional)

½ cup fine whole-wheat or spelt bread crumbs

¼ teaspoon paprika

⅛ teaspoon freshly ground white pepper

⅛ teaspoon dried thyme

⅛ teaspoon dried oregano

2 teaspoons olive oil

Instructions

Preheat the oven to 350˚F.  Oil or coat a 2-qt. baking dish with cooking spray. 

 

Bring a large pot of salted water to a boil.  Add the macaroni and cook until al dente.  Drain in a colander and rinse under cold running water.  Drain well.  Meanwhile, heat the Silk® with the bay leaf in a medium saucepan over medium heat until the milk scalds (small bubbles will appear around the edges), about 5 minutes.  Remove from the heat and set aside for 5 minutes while you cook the onions.  Remove the bay leaf.

 

Heat the canola oil in a 2-qt. saucepan over low heat.  Add the onion and cook about 5 minutes, or until translucent.  Add the flour and cook, stirring constantly with a wooden spoon, for 3 minutes more, being careful not to let the flour burn.  Add the hot soy milk in a steady stream, whisking constantly, until thick and smooth.  Cook the sauce at a simmer for 2-3 minutes, then remove from the heat and add the cheese, paprika, 1&1/2 teaspoons of the salt, and the black pepper.

 

If the cheese is not completely melted, puree the sauce in a food processor until smooth and creamy.  In a large bowl mix the sauce with the macaroni and chiles, if using.  Pour into the prepared dish.  In a small bowl mix together the bread crumbs, paprika, remaining 1/4 teaspoon salt, the white pepper, thyme, oregano, and olive oil.  Sprinkle over the macaroni.

 

Bake for 20 minutes, or until bubbling and browned on top.
