Akasha's Whole-Wheat Popovers
Ingredients
3 large eggs
1 cup plain Silk® Soymilk
2 tablespoons unsalted butter, melted
½ cup unbleached white flour
6 tablespoons whole-wheat flour
½ teaspoon fine sea slat
1 to 2 tablespoons unsalted butter, melted
Instructions
Preheat the oven to 450˚F.
Whisk the eggs, Silk® Soymilk, and melted butter in a medium bowl. In a larger bowl mix together the unbleached flour, whole-wheat flour, and salt. Make a well in the middle of the dry ingredients, add the egg mixture, and whisk to combine. Let the batter sit for ten minutes.
While the batter is resting, place the popover or muffin tin in the oven for five minutes. Remove and brush eight of the wells with melted butter. Divide the batter into the eight wells, filling each about two-thirds of the way. Without peeking, bake for 15 minutes at 450˚F, then reduce the heat to 350˚F and bake for an additional 20 minutes. The popover should be browned, puffed, and golden. Serve immediately.
